- In a sauce pan on the stove at medium heat, sauté the onions and mushrooms in the butter until tender.
- Add half and half and all seasonings and whisk to incorporate.
- Tear sliced American cheese into small pieces and add to mixture. Allow to cook slowly while stirring constantly until all cheese is melted.
- Mix cornstarch and water together in separate small bowl/container, then whisk into mixture. Cook for 3-4 more minutes to activate cornstarch.
- Once mixture has thickened, add shrimp and crawfish (if you cant get crawfish, just double the shrimp) and cook of an additional five minutes to cook proteins.
- Stir constantly to prevent scorching of the cheese mixture.
- Fold in green onions and serve immediately or cool for later use.
