  1. In a sauce pan on the stove at medium heat, sauté the onions and mushrooms in the butter until tender.
  2. Add half and half and all seasonings and whisk to incorporate.
  3. Tear sliced American cheese into small pieces and add to mixture. Allow to cook slowly while stirring constantly until all cheese is melted.
  4. Mix cornstarch and water together in separate small bowl/container, then whisk into mixture. Cook for 3-4 more minutes to activate cornstarch.
  5. Once mixture has thickened, add shrimp and crawfish (if you cant get crawfish, just double the shrimp) and cook of an additional five minutes to cook proteins.
  6. Stir constantly to prevent scorching of the cheese mixture.
  7. Fold in green onions and serve immediately or cool for later use.
